At the Yura Fishing Port in Awaji Island, Hyogo, the fish market🐟🐡 is lively due to its daily auction of its catches🛥️🌊. Awaji Island⛲ is known for its fresh, high-quality seafood, attracting brokers from all over Japan 😋🗾🔍.

Typically, these places are closed to the public😭, but one group is allowed to enter through the tour plan linked down below🤏💡. You will be guided by a professional broker who supplies fish to markets such as Toyosu Market and other high end restaurants🙌.

During the auction, you will have no time to blink👀🥁 as their unique auction system is a quick few seconds process with little words. Brokers chalk their best offers🖍️🪵 on the wooden blocks and toss them into the fish crates; the highest bidder is called🎤. This process is repeated, and on days with a large catch, it can continue until sunset!🌇🌆

🏚️Kawara (瓦) are traditional Japanese roof tiles, originally introduced from China approximately 1,400 years ago. ⏳Kawara production in Japan began around 400 years ago on Awaji Island in Hyogo Prefecture 🎌during the Edo 🏯 period.
🪵Before kawara, rooftops were traditionally made of wood. 🥳The introduction of kawara was innovative, as the tiles are fire-resistant, practical, and aesthetically beautiful. 🎖️Today, Awaji Island remains one of Japan’s top three producers of kawara. 👺Awaji kawara is especially renowned for its Ibushi (smoked) finish, which gives the tiles their distinctive silver-gray color.
🤎The artisans, known as Onishi, specialize in creating “onigawara,” the decorative tiles often featuring demon faces that can be seen on temples and shrines.

🫓You might think it’s okonomiyaki, the famous Japanese savory pancake — 😐but Nikuten is different.
🏯Even before okonomiyaki became widely known, 🍥Japan already had many regional dishes 🎌made with flour, such as Nikuten from Takasago, Hiroshima-yaki from Hiroshima, and Monjayaki from Tokyo.
🔦It was born from a unique idea: using leftover oden. 🥚Oden is a traditional Japanese hot pot dish featuring ingredients simmered in a light, savory dashi broth, such as boiled eggs, daikon radish, konjac, and skewered beef. 😋Because oden is cooked in large pots, people didn’t want to eat the same dish for several days 🐤 and that’s how Nikuten was created.
🦖The name Nikuten comes from niku (meat) and ten from tenkasu (crispy tempura flakes). 🪿On a thin flour batter, almost like a crêpe, generous portions of cooked potatoes, cabbage, meat, and other ingredients are piled on, then folded in half and grilled.
